Land Rover Defender Birthday Cake

Boys will be boys and they love their toys…!

My husband loves his ‘Landy’ and he enjoys nothing better than going on a 4×4 trip, testing its limits and performance.

Oh, I can tell you many, many stories of our Land Rover trips we’ve been on, most of them ending in the water or mud or somewhere not very appealing. And I think that is the main appeal {for the boys in any case} of the infamous Defender.

It’s kind of like a dog – man’s best friend. {Well, some men in any case – not the Toyota-drivers…}

Oh, and we’ve heard all the jokes – trust me! But I must just say that those Defenders are mighty strong and sturdy and dependable, contrary to all the jokes, etc. We’ve driven through rivers, where the water reaches the bottom of the windows, covering the entire front ‘nose’ {?!} of the truck, climbed rocky mountains so steep you cannot adjust your seatbelt {an automatic safety feature} and you’re literally pooping your pants, but we always come out on the other side. {Ok, almost always…}
And even I can drive it – it’s quite fun too! Nothing feels better than just ramming over stuff! You also feel so safe when driving through dodgy areas, although a quick getaway is totally out of the question – it’s like driving a snail as a getaway car…

Right, so in honour of {some} man’s best friend, here is the Landy cake I made for my husband’s recent birthday:

It was a rich and decadent chocolate affair with cream cheese frosting and covered in decorative fondant.

Snow White birthday cake

I LOVE these doll cakes and secretly want one for a next birthday… {Yes, that would be for a 30-something birthday…}
Anyways, so I was thrilled to bake this birthday cake for a friend’s little girl’s 4th birthday.
Rainbow layers inside with vanilla bean buttercream – but sadly no inside photos 😦

10th Birthday Monster Cupcakes

This weekend was quite a busy one – with last-minute Christmas cake orders, a tenth-birthday cupcake order, as well as a few social events! Thank goodness for long-weekends, right?
I received a request for birthday cupcakes for a boy turning ten – the cupcakes had to be strawberry flavour, so at first I was a bit stumped as to how to make these strawberry cupcakes boyish… I scoured the internet for recipe and theme ideas and eventually I decided on monster-themed strawberry cupcakes. {I know my son loves monsters!}
I created two types of monsters – one a strawberry monster {my own creation} and the other just a generic monster {quite like the Monster Inc fellas – thanks Pinterest!} to adorn these yummy strawberry cupcakes.
These scrummy cupcakes are oh-so-moist and fluffy, with swirls of strawberry coulis inside and a strawberry butter icing. {Yum!}

Birthday cupcake – Red Velvet meringue

Today is hubby’s birthday and as you do on a birthday, you you have cake for breakfast!

Our favourite red velvet – from a cake recipe of a fellow baker friend, Rozanne Pieters, and my own twist: a light and fluffy meringue topping.

250g butter (I used salted)

125ml sunflower oil

2.25 cups of sugar

2 free range eggs

1 bottle of red food colour (40ml)

1 cup of buttermilk

10ml baking powder

2ml salt

2.5 cups of flour (all purpose)

2 tablespoons cocoa powder

Cream butter, oil & sugar together.  Add buttermilk, red food colour & eggs.  Add all dry ingredients and fold into the wet mixture. Place dollops of the mixture into cupcake casings in a muffin pan. Bake in a pre-heated oven of 180C for 20mins.  A toothpick should come out dry when you test it.

For the meringue topping, whisk 1 egg white while slowly adding about half a cup of castor sugar.  Add shelf a teaspoon of vanilla essence and a pinch of cream of tartar. Whisk until glossy and soft peaks form.  Pipe onto cooled cupcakes.
